It begins with a rare fruit so sweet it was named for forgetting, and continues with the science that brings its sweet protein to food and beverage makers.
The Oubli fruit grows on Pentadiplandra brazzeana, a climbing shrub native to the forests of West-Central Africa, and is famous for its striking sweetness. Scientists later identified brazzein as one of the sweet proteins behind it.
Its name is often linked to the French oublier, “to forget.” As local tradition tells it, the fruit was so sweet that children who tasted it forgot to go home.
We produce brazzein with yeast-based precision fermentation, delivering a consistent, scalable sweet protein without relying on scarce wild fruit.
